We have been looking at all of our restaurants and trying to get a better understanding of how much of their food comes from farms as opposed to from local food grown by the people involved in the business. It is part of the understanding of how much it means to us that what makes our food special is made by people who share our passion. This has meant looking at the different farming practices, working with people on farms who are engaged in the farming process.
We want to try to give us a better idea of how many farms are actually producing a good food product. To do this we have been comparing a variety of farms around the world in terms of how much of their food comes from farms apronxand local food grown by the people involved in the business.
The data we use on average comes from a number of sources but from these three sources we know that the UK produces about 45 per cent of our food – but of that o바카라사이트nly 23 per cent comes from farms!

There are no easy answers for that, and so when we have found good data on how they are producing it is a challenge because we want to be able to make decisions about our food without looking at how many of our food came from local food grown by the people in the business.
For example if a farm is producing 10,000 kg per annum but we need to find out how many of them have 20 or 30 per cent organic produce it’s very difficult for us to make that decision. We do a lot of research on our own, but we need a good understanding of which farms have the best combination of the different factors – whether it’s in terms of how much of their food it comes from local organic produce or how much of their food it comes from our own farms.
We are also working to reduce the impact of our food to local consumers. Many people assume when they buy food from us that it’s going to be produced locally and the reality is most of the food we buy comes from the UK and other European countries which is about 5.5% of the total UK production.
